Gastronomy
The typical food of Mérida highlights the
Andean pisca, arepas, Merideño pastries,
polished sweets, pineapple water or
blackberry wine. They have delicious
dishes based on beef, pork, chicken,
sheep, rabbit and trout, as well as soups,
broths, cakes, bread and smoked cheese,
alongside a variety of sweets and drinks.
For the traditional arepa they use ground
corn, but they also have a unique version
of the arepa, made with wheat flour, which
is kneaded with water, eggs, milk and
butter, a little touch of raw cane sugar and
a bit of salt. The arepas are roasted on clay
plates or a large baking pan.
Merideños pastries can be filled with trout,
chicken, meat with rice, cheese and also
cheese with a guava snack.
Their sweets are characteristic,
highlighting the polished sweets, which
are made from milk covered with colored
sugar and a thin layer of solid sugar. There
are also strawberries with cream, stuffed
figs and alfondoque •a paste made of
cane molasses, cheese and ginger•.
Among their drinks there are Andean corn
and rice chicha, mead, pineapple water,
blackberry wine, caspiroleta • a drink
made from hot milk, eggs, cinnamon,
some alcoholic beverage, sugar and some
other ingredient•, and mistela •a sweet
alcoholic drink made with a mixture of
grape must•.
